Ingredients
- 1 tbsp vegetable oil
- 1 c. cubed smoked tofu, chicken or prawns
- 4 c. hot cooked brown rice
- 1 c. grated carrot
- 1 c. grated beet
- 1 c. packed baby spinach
- 1 c. slivered almonds
Bliss Bowl Dressing
- ¼ c. nutritional yeast flakes
- 4 tbsp tamari (wheat free pref)
- ¼ c. apple cider vinegar
- ¼ c. water
- 2 tbsp tahini
- Juice of 1 lemon
- 2 cloves garlic, crushed
- 1 c. extra virgin olive oil
Nutritional yeast is available at any health food store and is a delicious source os B vitamins. It’s also great on popcorn!!!
Instructions
- In large skillet, heat oil over medium-high heat; sauté tofu. If using chicken or prawns sauté until cooked. Drain on paper towel–lined plate.
- Bliss Bowl Dressing: In blender, purée together nutritional yeast flakes, tamari, vinegar, water, tahini and garlic. With motor running, add oil in slow, steady stream. Blend until smooth. (Makeahead: Cover and refrigerate for up to 1 week).
- To serve, divide rice among 2 bowls; drizzle each with 2 tbsp of the dressing. Top each with tofu, carrots, beets, spinach and almonds. Drizzle each with 3 tbsp of the dressing. Feel free to increase or decrease the ingredients in the dressing to taste. You can also add sprouts and a variety of greens, find your bliss! You can also use kale or swiss chard in this dish.
