Salad Ingredients

  • 3 cups finely chopped kale leaves
  • 2 cups finely chopped broccoli
  • 2 cups finely chopped red cabbage
  • 1 cup shredded carrot
  • 2 cup roughly chopped cilantro or parsley
  • 1/2 cup toasted slivered almonds
  • 1/3 cup sliced green onions
  • 1 avocado chopped

Carrot Ginger Dressing

  • 1 large carrot chopped
  • 1/2 cup apple cider vinegar (rice wine vinegar)
  • 2 Tbsp Avocado or safflower oil
  • 1 tbsp finely chopped ginger
  • 1 tbsp honey
  • 1 tbsp white miso (contains gluten)
  • 1/2 tsp sesame oil
  • Salt and pepper to taste
