Ingredients

  • 1 fresh pineapple, peeled and

  • cored to ½ inch slices

  • 1 Tbsp lime juice

  • 1 Tbsp lemon juice

  • ½ tsp cinnamon

Instructions

  1. Prepare and preheat grill. Combine lime and lemon juices and cinnamon in a small bowl. Baste the pineapple slices with this mixture on each side.
  2. Grill pineapple on medium heat for about 5 minutes on each side, until heated and tender.
  3. Brush with any remaining juice mixture and serve.

Extras: You could add a ½ cup of banana nice cream or a couple of tablespoons of one of the pudding/parfait mixes to this as well. You can of course just grill one or two slices if serving one person, or save leftovers and use in one of your other recipes. It’s also great in taco salad or salsa.
